Home-made Mee Hoon Kway Recipe

"Do you want to eat Mee Hoon Kway?" "Yes! I want I want"...

The humble Home-made Mee Hoon Kway ranked No.1 noodles dish at my home-sweet-home. We love it so much that it has become a weekly must-have. This delicious and nutritious noodles is in fact very easy to prepare. The steps are easy to follow, the ingredients is flexible too. Get Creative with the endless combination of this yummilicious noodles!
Yummilicious Mee Hoon Kway

#1 Great Soup Base
#2 Well Kneaded Dough
#3 Abundance of Fresh Ingredients

#1 Great Soup Base
"What goes into the soup pot will determine the taste of your Mee Hoon Kway."
Basic Soup Ingredients:
  • 1/4 cup Soya Beans (Soak for at least 4 hours or until soft)
  • 1 cup Ikan Bilis (Soak for 5 - 15 minutes in water)
  • 1 stock of Spring Onions
  • 1 small Onions
Other variable ingredients:
  • 1/2 Chicken Bones 
  • 4 pcs Pork Rib Bones 
  • 1/2 Tomatoes 
  • 1/2 Sweet Corn 
  • 1 Carrot 
  • 1 slice Pumpkin 
  • Kelp/ Seaweed 
Steps:
Prepare ingredients, set aside. In your soup pot, add water, wait for water to boil before adding in all the ingredients. Simmer for 2 - 3 hours, depending on the types of ingredients you add to your soup pot. Sieve and ready for use.

I am using a pressure cooker, hence cooking time is much reduce, only 15 minutes.

How to use a pressure cooker?
Add ingredients, cover pressure cooker lid. Using high heat, wait for the pot to whistle. Turn to low heat, let it continue to whistle for 15 minutes. Off fire, wait for the safety button to rest before opening the lid. Done!

#2 Well Kneaded Dough
"Previously I was using my bare hands to knead with lots of love and patience. Now with this Bread Machine kneading is fast and effortless."

When I do not have Bread Machine, I do it the manual method, by bare hands. Pour flour into a large mixing bowl, make a small opening at the centre of the flour mixture. Add soup/ water slowly into it mixing bowl as I knead in a circular motion. Keep on kneading until I get a "QQ" feel of the dough texture. When ready, set aside for 30 minutes before using it for cooking.
Ingredients:
"For more flavourful noodles, please steam and mash ingredients before adding to dough. Some suitable ingredients: Pumpkin, Sweet Potato, Carrot, Potato, Sweet Corn"
"I love to add Quail Eggs to my dough as it is of higher nutritional value as compare to Chicken Eggs. Also because of the small quantity of dough which I prepare, the volume of Quail Egg is just right."
Pour all ingredients into bread machine.
Select Mode 14, Slow Knead Dough, default 30 minutes. Actually the dough is ready by 10 minutes, you may stop once the dough mixture is ready.

Access flour at the side is normal if dough volume is little. It does not affect the kneaded dough quality.

How to tear traditional Mee Hoon Kway?
Grab a handful of dough. Using your thumb and index finger to:
(1) Press
(2) Stretch
(3) Pull
(4) Tear (*Into desirable bite size.)

When I have access time for fanciful noodles...

I made Pumpkin Mee Hoon Kway with Hello Kitty Mould. This is tricky and pretty time consuming. I'm glad that the kitty are still in shape after cooking!

#3 Abundance of Fresh Ingredients
The combination of ingredients is endless. I usually add 1 type of meat + 3 varieties of vegetables + 2 varieties of toppings to my little one's serving.

Below are the list of ingredients that can be added to Mee Hoon Kway:

Meat: Threadfin Fish Slices/ Chicken Slices/ Home-made Chicken Balls/ Home-made Pork Balls/ Whole Prawns/ Clam/ Home-made Dumplings

Vegetables: Cai Xin/ Xiao Bai Cai/ Kang Kong/ Phuay Leng/ Baby Spinach/ Bean Sprouts/ French Beans/ Long Beans/ Sweet Corn/ Edamame/ Fresh Button Mushroom/ White Bunashimeji Mushroom/ Black Fungus

Toppings: Ikan Bilis/ Sliverfish/ Tiny Dried Shrimp/ Seaweed/ Spring Onions

How to Cook?
Add soup base to pot, wait for the soup to boil, start to hand tear the dough into pieces of noodles, add to pot. Stir occasionally to prevent noodles from sticking together. Add in all other fresh ingredients in sequence (1) Meat, (2) Vegetables, cook for 3 to 5 minutes. Ready! Add (3) Toppings and serve!
Now I'm sure you can cook a pipping hot bowl of Home-made Mee Hoon Kway. A little more practice will make you a pro. If you do not add egg to the dough, you can actually have a great fun time rolling and shaping it with your little one. Time for motor skills!!!
