Air-Fried Selar Fish Stuffed with Sambal Chilli

Fish is good for brain development. However, due to the increasing environmental pollution in the recent years, mercury in fish had drawn the attention to many fish lovers, particularly for pregnant women and mummies. So what is the safer fish to be consume?

The Small Fish! Fish that are at the top of the food chain tend to contain more mercury, "The Big Fish". While fish at the lower food chain contain relatively less mercury, "The Small Fish". Hence if you are still unsure what types of fish is safe for you and your little one, go for the smaller fish.

Previously, I have tried to cook this spicy dish using conventional pan frying method and oven baked method. Pan frying method makes my entire kitchen floor extremely oily and my entire body smelled so fishy after cooking. Oven baked method is much better, but it takes a long time as I need to preheat the oven and it was difficult to flip the fish to the other side. Now with Buffalo Smart Air Fryer, cooking makes easy.

Here is a recipe of small fish! The spicy sour sambal is so addictive. Though not suitable for little one, mummies can eat it. Hee Hee!

I usually buy Selar Fish from supermarket. They provide complimentary service to clean, scale and gut. Upon reaching home, I just need to trim the fins and tail with a pair of scissors, cut 2 deep pockets from the head to the tail, stuff in Sambal Chilli mixture to the deep pockets, rest in fridge for at least 30 minutes and it's ready to cook.

Sambal Chilli Mixture Recipe:

  • 2 - 4 tbsp Sambal Chilli Paste (Add according to preference)
  • 1 tbsp Belachan
  • 1 tbsp Oyster Sauce
  • 1 tbsp Oil
  • 1 to 2 tbsp Lime Juice (Add according to preference)
  • A pinch of Salt
  • Banana Leaves (Optional)

Tips: I love to use banana leaf for extra flavor and aroma. It is not a must to use banana leaf. You can omit if you do not have it.
Method:
Wash and trim banana leaf to size, place banana leaf on Baking Pan, spread a teaspoon of oil, arrange Selar Fish on it. Load to Buffalo Smart Air Fryer, select Fry at 230 degree for 20 minutes.


Tips: Temperature and Time setting for BAF is only a guide. You may monitor closely and make slight adjustment to the setting for your first attempt. Frequent opening of lid will cause heat loss, resulting in a longer air frying time.
Adjust to 180 degree after 5 minutes.
About 12 to 15 minutes later, flip Selar Fish to another side.
Continue to air fry for another 5 to 8 minutes, until fully cooked with crispy surface.


Tips: You may stop at anytime when you feel that the fish is cook to your preference.
After 20 minutes of air frying. Ready!
