Steamboat Feast with Little One

We had steamboat for reunion dinner every year. This year, we are having steamboat again with the addition of my little gourmet eater. How to prepare healthy and delicious steamboat feast suitable for little one? How to minimize the cleaning up after eating? I have figured my way after a trial steamboat dinner at my home-sweet-home before the actual reunion dinner. Here I'm sharing on how I did it. 100% satisfying. Everyone top up rice and soup, including my little princess.
Our first steamboat dinner in 2015 with 2y4m princess. She was eating all the way, must be really delicious for her palate.

Here are some tips on how to prepare an enjoyable and healthy steamboat meal:
Prepare a steamboat platter with a wide variety of fresh ingredients rather than processed food. This entire steamboat platter cost about $40 for 3 adults and 1 child. Can you believe it? I actually bought more than I need but I do not serve all. I only prepared and served the required quantity and keep the remaining ingredients fresh in the fridge as back up. I will cook the remaining ingredients for lunch and dinner in the following day.
What's in my Steamboat XXL Platter?
Threadfin Fish, Limpets, Pork Collar Shabu Shabu, Canada Scallop, Broccoli, Cauliflower, Fish Roe Fish Balls, Kitty Fish Cakes, Brown Bunashimeji Mushroom, Korea Wong Bok, XL Asparagus, Xiao Bai Cai, White Button Mushroom and Tofu. (Processed ingredients is less than 5%)

Soup Base:
Avoid using those instant packet soup base. Prepare a healthy and nutritious soup base with less salt, msg, seasoning. Don't worry if your soup base taste a little bland or dilute. When all the steamboat ingredients are added into the pot, the soup will taste more and more intense. Alternatively I added Krystal Wee Essential Homemade Powders to enhance my soup base. On busy days I simply do without any soup base, just water, 4 types of Krystal Wee Essential Homemade Powders with minimal salt and seasoning. There are many types of soup base you can prepare. For meat lovers, you can consider making a vegetables soup base, vice versa for vegetables lovers you can prepare a chicken or pork soup base. If you are still unsure of what soup to prepare, try using chicken bones, sweet corn and carrot, the most basic soup base. For us, we prefer light herbal soup base.
Light Herbal Soup Base:
It's so fast and easy. Soak mushroom for about 30 minutes. Add Dried Mushroom, Goji Berry, Dried Longan, Red Dates, Dang Sheng and Dang Gui into Pressure Cooker and let it whistle for 5 minutes, rest for 30 minutes. Ready for use! It is not necessary to rest but since I'm not in a hurry, I might as well rest it to let it continue to simmer with the trapped heat. A smarter way of doing it!

Tips: Add Chicken Bones for a richer tasting herbal soup base.

Steamboat Set Must-Have:
Induction Cooker and Steamboat Pot
Induction Cooker:
Do away with the old fashioned portable gas stove and gas canister! Invest in a good induction cooker which is able to control temperature well and fast enough. This will save waiting time and speed up the cooking process. Song-Cho Induction Cooker heats up rapidly, with no hot spot. It is able to maintain its temperature very well. Easy to operate too. Compatible with most Buffalo Stainless Steel Cookware.

Steamboat Pot:
Don't you find it difficult to find your cooked food from the conventional steamboat pot? I'm doing away with it. I'm using Buffalo 24cm Function Series Pot which has a sufficient depth, not too deep or too shallow. It's just nice for us, I find it easy to find the cook ingredients. There's no need to stir and stir to search for the cooked ingredients.
Everyone had a great steamboat feast. Towards the ending, we added all ingredients into the pot to simmer. I adjusted the temperature of my induction cooker to 60 degree after all ingredients were cooked. The temperature was well maintained, vegetables was soft and tender. So yummy! We finished everything including the pot of soup. Left with empty bowls, plates and pot. My little princess ate 3 times her usual portion, hubby top up rice, I ate twice my usual portion too. 100% satisfying for everyone at home-sweet-home.
