During my confinement, my grand aunty cooked this dish for me. However, the Red Glutinous Rice Wine taste was very different. When I asked for recipe, again I was told of just a few very simple and easy steps too.
The key factor which determine the taste of this dish is her "Homebrew Red Glutinous Rice Wine". Now I can't wait to pay my grand aunty a visit to learn the ropes.
- 1 tbsp of Sesame Oil (Use normal cooking oil for daily home-cooked)
- 1 tbsp of Shredded Ginger (Add more Ginger for confinement mummies)
- 1 tbsp of Red Glutinous Rice Wine Residue
- 1/2 Chicken cut into pieces
- 1 cup of Red Glutinous Rice Wine
- 1 tbsp of Soya Sauce
- 1 cup of Water (Replace with 1 cup of Red Glutinous Rice Wine for confinement mummies)
- A pinch of Salt (*Optional)
Add Chicken, continue to stir fry for a few minutes until fragrant.
Add Red Glutinous Rice Wine, Soya Sauce, Water and Salt.
Lock Buffalo Pressure Cooker. Always start with high heat After a few minutes, the red indicating safety valves would lift, there's when the pressure cooker begin to whistle. Turn to low heat, let it continue to whistle for 12 to 15 minutes. Turn off heat. When the red pressure indicating safety valve descend completely, it is safe to open the lid.
I'm using Buffalo Pressure Cooker. If you are using a conventional pot, you may need to add double amount of wine or water and simmer under low heat for at least 40 minutes.
