Long Bean Omelette Recipe

This humble egg dish has again won the taste of my little one. Though I have cooked numerous times with the standard ingredients, minced garlic, minced dried shrimp, eggs and long beans. This is definitely a more adventurous attempt. This idea struck me when I was in a super hurry, with no extra time to make a trip to the supermarket just to get fresh garlic and dried shrimp. All I have was my homemade powders, eggs and long beans.
A cross section of my Long Bean Omelette. All you can see is long beans and egg, a wonderful combination of flavours without the guilt of serving little one with salt and artificial seasoning.

Ingredients:
  • 2 Chicken Eggs
  • 4 Long Beans cut into thin slices.
  • 1 tsp of Homemade Dried Shrimp Powder/ Silverfish Powder
  • 1 tsp of Homemade Chicken Powder
  • 1/4 tsp of Homemade Garlic Powder
  • A pinch of Pepper
  • A pinch of Salt (*Optional)
  • 2 tbsp oil

Preparing Egg Mixture:
Add 1 tsp of chicken powder, a pinch of pepper and salt (*optional), beat the egg, set aside.
Heat wok, add 2 tbsp of oil, add Long Beans, 1 tsp of Dried Shrimp Powder, 1/4 tsp of Garlic Powder, a pinch of Pepper and Salt (*Optional). Toss and mix well, stir fry until beans has reach your desirable softness.

"You can replace Dried Shrimp Powder with Silverfish Powder if your little one is too young for it."
Pour in egg mixture, spread the long beans evenly. Leave it for a few minutes, allow the egg to solidify.

Flip the Long Bean Omelette only after the surface has solidify. This will take skills, with a little more practice, you can do it! Alternatively, you can cut it into smaller pieces before flipping to the other side. Who cares? Eventually we will still cut to smaller pieces before serving.
Long Bean Omelette is ready! Best serve hot with a bowl of rice or porridge. My frying pan is clean without residue.

The Verdict...
This evolution Long Bean Omelette Recipe of mine turned out to be just as great as my conventional recipe. My princess loves it so much, so do I. It's fast and easy, save me the trouble of mincing the garlic and dried shrimp. No more smelly fingers. Great!
