Here is my 1 pot mixed rice dish, sharing with my 2 year 10 month princess.
To provide a recipe is a very easy thing to do but seriously it doesn't help much for your little picky eater. I will teach you how to fish instead.
How to decide on what goes into your Rice Cooker?
Start with basic. Recall what you always add to your little one porridge. Usually is pumpkin, potato, carrot... Of course there are more ingredients you can add to it. No restriction in what you can add to it, as long as it turned out to be well accepted by your little one. For me, I do it my way. I decide what is suitable for her, able to digest well for her little tummy, provided there is no allergy.
SUITABLE ingredients for cooking One Pot Mixed Rice?
Carrot, Potato, Sweet Potato, Pumpkin, Yam, Cauliflower, Tomato, Sweet Corn, Fresh Mushroom, Chicken, Pork, Dried Scallop, Dried Oyster, Dried Shrimp, Red Kidney, Black Beans, Soybeans, Chestnut, Ginko Nuts, Red Dates and more...
UNSUITABLE ingredients for cooking One Pot Mixed Rice?
Green Vegetables as it tends to turn yellowish, lost nutrients.
Fish and Fresh Seafood as it tend to get overcooked, resulting a rubbery texture.
Preparation
Grab a little of everything that you know is suitable for your little one. Wash, Rinse or Soak if require then cut into appropriate size. If you are using meat with bones, blanched and set aside.
Using a Rice Cooker to Pre-Stir Fry...
It is not a must to stir fry the ingredients, you can skip this and move on to standard way of cooking rice, just add in sequence: (1) Ingredients, (2) Rice, (3) Krystal Wee Powder, (4) Water and press "Cook".
Trust me! The stir frying process will make your One Pot Mixed Rice taste a lot better, more fragrant, more tasteful.
Add ingredients to stir fry for 2 to 3 minutes until fragrant before adding Rice.
For every 1 cup rice, you can add 2 tsp of powder.
Here are 2 sets of examples on the combinations:
(1) Mushroom + Sakura Chicken or Pink Chicken + Scallop + Garlic + Ginger.
(2) Mushroom + Pork or Yellow Pork + Dried Shrimp + Garlic + Ginger.
Amount of water will depend on your little one's ability to chew. I started with slightly more water to achieve softer rice texture. Approximately 1 Cup Rice : 1 1/2 Cup Water. You may adjust amount of water accordingly. Give it a gentle stir before closing the lid.
Closed the lid, stop the current mode. Select "Cook" mode.
I know you are anxious but please do not open the lid, else will result in heat loss. Let your rice cooker do the cooking. I'm using Song-Cho Rice Cooker with a see-through tempered glass top lid.
After approximately 40 minutes, my One Pot Mixed Rice is cooked! Use a rice spatula to gently mix the rice evenly. Let your little one try first, you can later sprinkle more homemade powders direct onto the rice if required. Best serve hot with bowl of Soup.
